Planetary Cooking Mixer

Planetary cooking mixer with scraped-surface agitation for jams and pastes

Jacketed batch cooker with planetary agitation: the agitator orbits the vessel while rotating on its own axis, so viscous fruit preparations, sauces and fillings are heated evenly without burning on the wall.

How it works

Product sits in a jacketed vessel heated by steam, gas or electric elements. The agitator head rotates on its own axis while the whole head orbits the vessel interior, so its path covers the wall continuously. Scrapers on the agitator keep the boundary layer moving, which is what prevents scorching in sugar-rich and starch-rich product. Most designs tilt or use a bottom valve for discharge, and the agitator lifts clear for cleaning.

The orbital motion is the point: a single central paddle leaves a static layer against the heated wall, and that layer burns before the bulk is cooked.

Suitable for

Jams, fruit fillings and confectionery-style preparations; tomato paste and concentrated sauces; purees being reduced to a target solids content; oil-based stir-fry style preparations; any viscous batch where scorching is the failure mode.

Not suitable for

Low-viscosity liquids, where a scraped surface gains nothing; continuous high-volume cooking, which needs a tubular or scraped-surface heat exchanger; product where shear must be minimised; very large batches beyond the vessel rating.

Material & compliance

Vessel, agitator and scrapers in SUS304 (EN 1.4301); SUS316L (EN 1.4404) on request for high-acid or high-salt product such as tomato and citrus preparations. Food-grade scraper material rated for the working temperature.

Supplied with CE declaration of conformity and DoC on request; material certificate EN 10204 3.1 available for contact parts. Where the jacket operates as a pressure vessel, the relevant documentation is supplied.

Selection notes

Specify the end-of-cook viscosity, not just the batch size — that is what decides whether you need scrapers and how much torque the drive needs. Ask for heat-up time to your working temperature with your actual recipe, because it varies sharply with viscosity. Check that the agitator and scrapers come out without tools; that is the difference between a ten-minute and an hour-long clean.

When you should not buy this machine: If you cook the same recipe continuously at volume, a batch mixer will be the constraint — go continuous. Also skip planetary agitation for thin liquids: you pay for orbital scraping you do not need, and a simple jacketed kettle with a paddle is cheaper.

FAQ

Why does a planetary mixer avoid scorching?

Because the scrapers continuously remove the static boundary layer at the heated wall. Scorching happens in that layer, not in the bulk, so keeping it moving prevents burning even though the bulk temperature is unchanged.

Can it cook tomato products without corrosion problems?

Tomato is acidic and salty enough to pit SUS304 over time. Specify SUS316L for contact parts on tomato and citrus recipes, and confirm the alloy with the factory against your recipe.

How do I judge batch size?

By working volume at your end-of-cook viscosity, not by geometric capacity. A vessel rated 300 L may only handle 200 L of a thick preparation without the agitator overloading or product climbing the shaft.
