Vacuum Frying Machine

Vacuum frying machine producing low-oil fruit and vegetable chips

Batch vacuum fryer that fries fruit and vegetable chips under reduced pressure, so water boils off at a much lower oil temperature than in an atmospheric fryer.

How it works

Product is loaded into a basket inside a sealed vessel. The vessel is evacuated, then the basket is lowered into oil heated to the working temperature. Under vacuum the boiling point of the water in the product drops, so moisture is driven off at oil temperatures typically well below atmospheric frying conditions. After the cycle the basket is lifted, and a centrifugal de-oiling step spins excess oil out before the vessel is vented and unloaded.

Lower temperature means less browning and less acrylamide formation in starchy product, which is the main reason snack producers use vacuum frying for fruit and vegetable chips.

Suitable for

Fruit chips — apple, banana, pineapple, jackfruit; vegetable chips — carrot, sweet potato, taro, green bean; product where colour and flavour retention justify the batch cycle; premium snack lines selling on appearance.

Not suitable for

Product needing the Maillard flavour development that atmospheric frying gives; high-volume commodity snacks, where a continuous fryer is cheaper per kg; product with very high initial moisture, which extends cycle time sharply.

Material & compliance

Frying vessel, basket and oil system in SUS304 (EN 1.4301); vessel built as a vacuum vessel with the relevant documentation. Oil filtration and condensate handling designed for washdown.

Supplied with CE declaration of conformity and DoC on request; material certificate EN 10204 3.1 available for contact parts. Pressure and vacuum vessels carry the documentation required for the operating envelope.

Selection notes

Ask for a cycle time on your own product to your target moisture, not a kg/h headline — batch vacuum frying is cycle-based, and moisture content moves the number more than anything else. Check the de-oiling step, since oil content is usually the specification customers reject on. Confirm how the vessel is cleaned and how long the vacuum pump takes to reach working level.

When you should not buy this machine: If you are making a commodity snack where browned flavour is expected, vacuum frying will taste wrong and cost more per kg. Also skip it if your product arrives very wet — vacuum frying removes moisture slowly compared with pre-drying, and a pre-dryer upstream will pay for itself.

FAQ

Why fry under vacuum at all?

Because water boils at a lower temperature under vacuum, so the product can be dried to a crisp at a lower oil temperature. That preserves natural colour and flavour and reduces the browning and acrylamide associated with high-temperature frying.

How much lower is the oil content?

It depends on the product, slice thickness and the de-oiling step. The centrifugal de-oiling stage usually matters more than the frying conditions. Ask for a measured oil content on your product rather than a percentage claim.

Can I use it for potato crisps?

Technically yes, but the flavour will be different from a conventional crisp because Maillard browning is limited. Vacuum frying suits fruit and vegetable chips sold on colour and natural flavour.
